    Heat the oven to 400 °F and line a tray with parchment.

    Pulse the chickpeas with the onion, garlic and parsley into a coarse paste.

    Stir in the oat flour, salt and cumin. If soft, add 1 more tablespoon of flour.

    Shape patties with a spoon and flatten them slightly on the tray.

    Brush with olive oil and bake 25 minutes, flipping halfway.

    Serve with a lemony yogurt dip.

Notes and substitutions

No processor: mash with a fork or potato masher.

For younger kids, leave out the cumin and serve in strips.

How to store and reheat

  • Fridge: up to 4 days in a sealed container.
  • Freezer: up to 3 months, raw or baked. Bake from frozen for 30 minutes.
  • Reheat in the oven or air fryer to bring back the crunch — the microwave softens them.
