Mash the lentils with a fork, leaving some whole for texture.

Mix in the grated carrot, onion, oats, egg, salt and paprika.

Let the mixture rest 10 minutes so the oats absorb the moisture.

Shape 8 small patties with damp hands.

Brown in a pan with oil, 4 to 5 minutes per side, or bake at 400 °F for 20 minutes.

Build the burgers with lettuce, tomato and a little seasoned yogurt.

Notes and substitutions
Egg-free: use 2 tablespoons of flaxseed soaked in 6 tablespoons of water.
If the mixture is too soft, add 1 extra tablespoon of oats.

How to store and reheat
- Fridge: up to 3 days, cooked, in a sealed container.
- Freezer: up to 3 months. Freeze raw, separated by parchment, and cook from frozen.
- Reheat in a pan or the oven — the microwave softens the crust.
