1. Chicken and rice soup

Shredded chicken breast, rice, carrot, onion, garlic, celery and homemade broth. Sauté onion and garlic, add chicken and vegetables, cover with broth and simmer 25 minutes. Add rice until tender and finish with parsley.

2. Caldo verde (kale and potato)

Potatoes, thinly sliced kale, smoked sausage, onion, garlic and olive oil. Simmer the potatoes until falling apart and blend smooth. Return to the pot with kale and grilled sausage, cook 5 minutes and drizzle with olive oil.

3. Creamy pumpkin soup

Kabocha squash, onion, garlic, grated ginger, vegetable broth and optional cream. Sauté the aromatics, add cubed squash and broth, simmer until soft and blend into a velvety cream.

4. Parsnip cream with bacon

Parsnip (or white sweet potato), onion, garlic, vegetable broth, diced bacon and chives. Simmer until very soft and blend. Fry the bacon until crisp and spoon over with chives — a kid favorite.

5. Bean and sausage soup

Cooked pinto beans, sausage, onion, garlic, tomato, bay leaf and kale. Brown sliced sausage, add aromatics and beans with a little cooking liquid, blend partially to thicken and finish with chopped kale.

6. Lentil and vegetable soup

Lentils, carrot, zucchini, potato, onion, garlic, tomato, bay leaf and cumin. Sauté the aromatics, add vegetables and lentils, cover with broth and simmer about 30 minutes. Full of fiber and iron.

7. Corn chowder

Sweet corn, onion, garlic, milk, vegetable broth and butter. Sauté in butter, add corn and broth, cook 15 minutes and blend with the milk. Serve smooth or with whole kernels for texture.

8. Pea and mint soup

Fresh or frozen peas, onion, garlic, vegetable broth, mint leaves and cream. Simmer 10 minutes, blend with the mint and finish with a swirl of cream — fresh and fragrant.

9. French onion soup

Sliced onions, butter, beef broth, optional white wine, crusty bread and cheese. Caramelize the onions low and slow for 30 minutes, add broth and cook 15 minutes. Top with bread and cheese and broil until melted.

10. Minestrone

White beans, carrot, zucchini, green beans, tomato, small pasta, garlic, onion and basil. Sauté, cook the vegetables 20 minutes, add beans and pasta until al dente. Perfect for using up the fridge.
